Those with diabetes should cook with extra virgin olive oil as much as possible, reports a paper conducted by a team of scientists at Australia’s Deakin University.
In this paper, researchers reviewed the current literature that investigated the health benefits of olive oil. They discovered that a compound unique to olive oil, known as oleocanthal, fights the particular type of inflammation that makes the body’s cells less sensitive to insulin.
The scientists also report that healthy monounsaturated fats in olive oil may also contribute to healthier blood sugar levels by driving down inflammation.

I have been using it lately for health reasons stated, as I am diabetic. Olive oil also improves the taste and texture of food, especially stir-fries.
The best benefit would come from eating the oil in the olives! The body is able to digest it easier because it has the fibre with it. Although there is no cholesterol in olive oil, the body creates it while attempting to digest it. David ended up with a triple by-pass in 2007 because of years of using too much olive oil in his food. (He has been vegan since he was 14 as he was allergic to flesh food and all dairy products.)
I believe olive oil, if heated above a certain temperature becomes saturated fat, the omega 3 benefit disappears. Is this true ? If this is the case, would it only benefit your health if used neat on salads ? Perhaps everybody needs to know this, because I’ve been using it for cooking for years and if its not really benefitting my health because I don’t have the correct information of its use, then its seems a bit pointless !!

Thank you for that helpful website, it was very beneficial. I eat most things raw now and very rarely fry unlike a few years ago when I used to cook for the family, so at least I know I’m doing the best for my health in that respect.
