The non-stick coating that prevents eggs from sticking to your pan may contribute to arthritis development, a new study out of School of Medicine at West Virginia University found. After investigating the link between blood Teflon levels –a compound known as perfluorooctanoate—the researchers found a 40 percent increased risk of arthritis in those with the highest perfluorooctanoate levels.
The scientists aren’t sure how Teflon impacts joint health but the scientists think that Teflon interacts with your body’s natural inflammatory pathways. Those with abnormally high levels of Teflon may have higher rates of inflammation –the underlying cause of both osteoarthritis and rheumatoid arthritis.
