But what would you say to a diet plan devised by a physician that is actually focused on high fat consumption to improve and sometimes completely reverse Type 2 diabetes?

Dr Westman's diet sounds like a LCHF diet. Look at Diet Doctor's web, from Sweden. It does an excellent job describing such diets and what is wrong with the existing "recommended" diets.
At least now you have validity from a doctor that DIET can cure diseases. Worth giving a try by those suffering from Diabetes type 2 disease.

More quakery and propaganda. This LCHF diet is nothing more than a ketogenic diet where you are significantly cutting on carbs (<20g daily) and severely restricting calories. The only reason the high fat content won't harm you is because you are on a low calorie diet and the fat won't be stored. Once your body depletes its liver glycogen and most of the your muscle's glycogen your body will use fat for fuel. Ideally is to reach full keto adaptation which can take several weeks to 2 months in some people. Only problem with such diet is the Low Calorie… Your body will adapt and you will damage your metabolism and thyroid function. If you do these type of diets long term you can even do permanent damage to your metabolism. I would not recommend going any lower than 1200 calories daily. would recommend heavy lifting workouts maybe 2-3 times a week to help maintain muscle mass. it's a good day to shock your body maybe once every 7 days with 1 day of full carb refeed….. That day you could eat majority of your calories from carbs, but important to keep your fats minimal that day ! (<75g) (<45g preferred).
Best way to control type 2 is to lose weight and do proper exercises. Losing weight, cutting refined carbs, favouring low glycemic index (except on your 1 carb refeed day) and doing resistence exercises (weight lifting) etc you will greatly improve your sensitivity to insulin ! Any diet that is < 1200 calories a day is bad for you long term.
CARBS are not your enemies, just eat the right ones and limit their consumption.
On your carb refeed day (1 day (some might do 2 days once fully adapted) you can have any carb, for long as
most of your daily calories that day are carbs. NO fats
More so one should never do any of these type of diets without consulting your doctor first !
Some people can significantly reduce their blood sugar and reverse type 2, but some people might still need
medication. NEVER *EVER* stop your meds without consulting your doctor and never stop taking glucose readings
as you normally do.
Also the fat diets in questions are beneficial only under calorie restriction. Never attempt those high fat diets on a calorie surplus !
