Surprisingly, this leafy green is not often talked about when recommending healthy foods that cure disease.
Yet, it’s one of the most powerful foods on earth. Over 12 types of antioxidants and loads of potassium are only two of many reasons repeated studies have proven it lowers blood pressure.

You can, of course, enjoy raw spinach in salads. But it’s one of the few veggies that may be even more powerful cooked.
You see, spinach has a pretty high acid level. When cooked, the acid is removed and what’s left is a sweeter tasting pure power bomb.
How to prepare cooked spinach:
Fill up a big pot with water and bring to boil on high heat. Put a pack of raw spinach into the boiling water and boil uncovered for one minute. Drain the water and press lightly on the spinach to get as much water out as possible.
It’s ready. You can enjoy the spinach like this or add it to many other recipes.
Note that the water left is very acidic and therefore should be discarded and not used for anything.
wouldn't the heat from cooking it destroy the antioxidants? I also thought that boiling would leech out beneficial minerals. I know there are some exceptions and perhaps spinach is one of them just like the lycopene in tomatoes is more available when cooked. Thanks

Cooking destroys half the co-metabolites needed for the mitochondria.
I have always cooked spinach and have not been boiling. Now I know. Thank you for this information

in a blender usually with carrot juice. Works for me.
