Freekeh grain, often compared to bulgur, offers a delicious, nutty flavor and amazing health benefits, recently re-discovered by health researchers.
The Academy of Nutrition and Dietetics highlighted freekah as a power food with excellent nutritional benefits, compared to other popular grains.
It is surprisingly high in protein, vitamins, minerals, and fiber, and has a very low glycemic index.
The powerful health benefits of freekah include:
• Cardiovascular health
As we know, consuming a diet high in whole grains versus refined grains is very beneficial to our cardiovascular health.
Whole grains are loaded with heart-friendly nutrients such as dietary fiber, antioxidants, vitamins, lignans and phenolic acid. Scientific evidence shows that these compounds have the ability to cut stroke risk by 30-36% and to reduce overall risk of cardiovascular disease by 25-28%!
And freekeh is the best source of dietary fiber (4 times as much fiber as other comparable grains), consisting mainly of insoluble fiber which is also much easier to digest.
• Type 2 diabetes prevention
After examining freekeh’s health benefits, Australia’s national science agency, CSIRO, discovered that it has a surprisingly low glycemic index (whole grain freekeh = GI-43, cracked GI= 55).
Glycemic index (GI) is a measurement of effects of carbohydrates on blood sugar levels.
Freekeh’s glycemic index values are much lower than couscous (GI= 62), basmati rice (GI= 58), and calrose rice (GI= 83).
In addition, Australian researchers found that freekehs’s insulin response was “exceptional,” which suggest that this wonder-grain should be consumed for control and prevention of type 2 diabetes.
Freekeh is also loaded with protein and contains high levels of resistant starch, which fuels friendly bacteria, responsible for producing a butyrate (a substance that helps prevents bowel cancer).
A study conducted by CSIRO in 2004 revealed that freekeh was responsible for an improvement in nearly every bowel health measurement.
You can use freekeh as a side dish instead of rice or pasta, or eat it as your morning cereal.
Preparation of freekeh is similar to rice. Use 5 cups of cold water to 2 cups of freekeh in a medium saucepan. Bring to boil, stirring occasionally. Cover the pan with a tightly fitting lid and lower the heat to cook for another 45 min for wholegrain freekeh, or 15 min for cracked grain freekeh. Make sure all water is absorbed and grains are tender before serving.
You can find freekeh grains in most health food stores or big supermarkets all over the world (look in the Asian or African sections).
