Problem with bamboo shoots in cans is that most contain brine which of coarse increases blood pressure.

What do you mean bamboo shoots in cans? Is brine a preservative for bamboo shoots? How about if harvest them from the mountains in Uganda and prepare them without any preservation?
Paschal Nyabuntu In the UK 90% of the bamboo shoots sales are in cans (tins) in using salt water as a preservative. 50% of your daily allowance for salt can be taken up in one serving. I don't know the logistics in shipping without salt water, I should imagine they are shipped by sea which takes a long time which uses up half the shelf life.
That’s as maybe IF you can get hold of organically produced bamboo shoots and cook your own, however, most, if not all commercially prepared Chinese food, contains MSG and that is NOT good, either for blood pressure or for diabetes.
As for cans, the lining is usually plasticised and contains BPA, never good.
Nigel Tolley There are different salts. The bad ones don't contain enough potassium. Look for sea salt. The body needs salt, but not the kind that is usually provided.
in your article regarding the benefits of bamboo shoots you at the end give a suggestion on how to prepare them by frying them in olive oil, olive oil does not hold up to frying temperatures well and almost becomes carcenogenic, you should maybe sub it with rice bran oil instead as it does handle high heat without breakdown, olive oil is not recommended for frying.

Preparation tip: thoroughly rinse the bamboo shoots in cold water after opening the can. Let drain and saute at medium heat in olive or sesame oil. Outstanding.
