The Agricultural Research Service recently released results from a nutrient content check on eggs from 12 locations that showed that eggs today have 30 mg less cholesterol than eggs twelve years ago.

Modern eggs also contain 16 IU more Vitamin D than those a decade ago. These two changes in eggs’ nutritive benefits are due to the improved diet the hens are fed.

Research also shows that eating eggs moderately (one a day) does not raise blood cholesterol levels.
