They created a line of mutant mice in which the gene for epoxide hydrolase was inactivated. They found that when the mice were fed a diet rich in unsaturated fat, the mutant mice showed signs of lowered blood pressure.

The study shows how a Mediterranean diet can have an effect on the blood pressure at the molecular level. Even better, the same diet is shown to be effective for lowering blood sugar, Alzheimer’s disease and different types of cancer.
