Adding to the mounting evidence that saturated fat may be in fact healthy, a new study published in this week’s American Journal of Clinical Nutrition discovered that lean cuts of red meat may boost heart-healthy “good” HDL cholesterol.

In this research, Penn State scientists assigned two groups of adults with heart disease one of two diets: the typical DASH diet and a healthy diet containing lean beef daily.

They found that both diets reduced bad LDL cholesterol levels buy only the beef diet increased low HDL levels. The scientists note that the minerals, healthy fats and protein in beef may be responsible for it’s cholesterol benefits.
