Those with diabetes should cook with extra virgin olive oil as much as possible, reports a paper conducted by a team of scientists at Australia’s Deakin University.

In this paper, researchers reviewed the current literature that investigated the health benefits of olive oil. They discovered that a compound unique to olive oil, known as oleocanthal, fights the particular type of inflammation that makes the body’s cells less sensitive to insulin.

The scientists also report that healthy monounsaturated fats in olive oil may also contribute to healthier blood sugar levels by driving down inflammation.
